Thanksgiving Fridge..

So... Our fridge is full to say the least. I don't think I have ever seen it like this. Anyway, we have seven people coming for Thanksgiving dinner. Additionally, my family will be staying with me and my college roommate. Therefore, we had to plan meals to keep everyone full and happy :)!

Sunday is our normal grocery shopping day. Therefore, we decided to buy all the Thanksgiving stuff then as well. Here is a picture of our fridge after all the shopping (the pantry looks similar):


Notice how there are things stacked? We had to start stacking because the drawers were FILLED! This is the result of $350 worth of purchases at Wholefoods (for the items we really need to have organic) and $150 from HEB (for the items which we can't either find organic at WF or... don't need to be organic).

*whew*... Hopefully this will last us awhile!

TV...Glee... and Decisions

Ok. Ivan and I have made a decision... a BIG decision. As of February 1st, Ivan and I will be getting rid of cable. I know thats a shocker! Our biggest question was what about news and Dallas Cowboys games?

Well, we decided... we can read the news, and we can always go out to watch Dallas games... no big deal. I have been feeling this way for quite awhile. I realized a year back that we were spending about 90% of our "free" time in front of the tube. We tried to just turn it off, but we would ALWAYS turn it back on. We tried to have self control but it didn't work. Therefore, it is gone. We are actually excited about it.

We will not be getting rid of our TVs however. We will be purchasing apple TV so that we can rent movies.. and actually "sit down" and watch a move together (if we turn it on). There will no longer be any "surfing" or mindlessly watching shows.

Now, I cannot take credit for this decision completely. One of my friends from church recently posted a blog where she was doing the same thing. I was surprised. It to some extent challenged my thoughts. I realized.. if I am saying "I can't do it... because I can't live without blah blah blah" then I am putting something that is "entertainment" above everything else. To some extent, it is a stronghold. Just like my friend, I wondered what my husband would say. He loves his sports and news soooo much. This is part of the reason I never brought it up before. When I brought the idea to him, he was so positive about it and started researching apple TV so we could still have access to movies for "home date nights".

Now, we will be waiting until February to flip the switch because my family is coming in January. Since my parents will be staying with me the entire month (and we will be working)... we decided to keep it, to   give them something to do.

Anyway, here is another reason I want to get rid of it. I really like (or liked) this show called Glee... I am pretty sure you are familiar with it. I love singing (and as many of you have read.. I wanted to be a country singer) and I was involved with musical theatre a bit. Therefore, this show was awesome. However, recently it has started to have an "agenda". I don't like that. Especially, since many of the agendas are not consistent with scripture and they are definitely not "pure and holy".

THEN.... I saw the latest GQ cover for Glee... and it SICKENED me. Here is the link to the slideshow (please make sure no kids are around if you choose to see them). It just is disrespectful, totally ungodly, and disgusting. I was extremely disappointed and I will no longer support this show. If you are a fan of this show, and a Christian, you may want to look at this slideshow and decide whether you want to further support this.

Chile Relleno Pie... Yum

Ok so everyone at church really seemed to like my family's recipe for Chile Relleno Pie. This dish has been our traditional Christmas morning breakfast for years. I only made the dish... but usually it is accompanied by refried beans and tortillas. I know... I know.. it does not sound like a breakfast dish.. but it is!



Ok, so here is the recipe,


1 cup of Bisquick
2 cups of milk
3 eggs
1 stick of butter
1 small can of chopped green chilis (usually found near the taco stuff)
1 lb of cheddar cheese grated
1 lb of monterrey jack cheese grated


  1. Prehead oven to 400 degrees. 
  2. Place stick of butter into 9xll or 9x13 baking dish and place in oven to melt butter
  3. Stir the chilis into the melted butter in the bottom of the dish and set aside
  4. In a mixing bowl, beat eggs, bisquick, and milk. 
  5. Toss the two types of cheese together in one bowl.
  6. Loosely spread the cheese in the dish on top of the chilis
  7. Then pour the egg,milk,bisquick mixture over the cheese in the pan. 
  8. Bake for 30-40 minutes until the top is nice and brown.
  9. Let sit for 10 minutes before serving.

UCF vs. UH in Houston!

This last Saturday, Ivan and I attended the UCF vs UH game in Houston. We were really excited because we hadn't seen UCF play in quite awhile. Here are some pictures from the event.

 You can't see it very well but the entire section there was all black and gold. As you can tell from the angle of this picture, we were not sitting in that section. We just happened to have tickets in the hardcore UH alumni section. It was... interesting. We were REALLY close to the field, but I think next time, we will be sitting with the rest of the knights.

I was looking for UCF alumni when we moved here, and I was told that they really didn't have a strong Houston chapter. In MD, there was a pretty strong group. I was actually asked to be the alumni leader (if I wanted to be). I didn't want to do it at the time because of time constraints.. but maybe I will reconsider.

Charming Tails....My Collection

Ok since my last most popular post was my charm bracelet post... I figured I would write a blog that maybe is similar. This is a blog... about my other collection... Charming Tails (hereafter referred to as "CT"). :) I love these little figurines. I just bought a ton of them since one of the stores here that sells them is going out of business. I can always find them online, but it was nice to have an actual store (a luxury I did not have in any of the previous states in which I lived). Now, most of the CTs that I recently purchased are not shown in this blog as they are being "saved" for future gifts. Since we didn't want to spend that much money just for "fun", we decided that Ivan will give them to me as gifts through out the next year or so. Therefore, as I get a new one, I will probably blog about it :). These CTs however, I have had for years (at least most of them).

The Christmas Charming Tails
There is nothing terribly unique about these little mice other than that I just really thought they were cute. HOWEVER, the angle CT is extremely old. That CT is actually the first one I EVER got. My parents bought it for me. They didn't know that it was part of a much larger collection of mice :). Later on in life, I found another "mouse" (which will be mentioned below), and bought it. Only later did I realize that they were both CT.

The snowflake CT is "special" in that I am in love with snowflakes. Many of our Christmas decorations are snowflake related (including the 98% of snowflake ornaments on our tree). Therefore, when I found a CT that looks like the one below... I just HAD to have it.







Other Charming Tails (The Everyday Collection)
These are my babies, or mice you could say. I love these little figurines, and they are some of my most treasured possessions (despite the fact that they are barely $20 a piece).  Most of them have a story so I will write that beside each one. These CTs are proudly displayed on a collection of black shelves, that are placed in a circle to surround a black plaque that says "Family". I have filled all the shelves currently, and I am now in need of more. Btw, each CT has a phrase or saying on the bottom. As I didn't have multiple hours to write this blog, I decided not to write them in here. Most of these are also retired.

The meaning behind this sleepy guy is interesting. My freshman year in college, I ALMOST missed a 7:30am exam. I woke up literally at 7:20am and had to run across campus. My mom sent me this when she heard the story. 


 No story for this guy.... he was a gift.
 If you don't know from my wedding, my favorite flowers are daisies. This CT just incorporates the flower in a cute way.
 There is no "special" meaning behind this other than, I am a female and  this   CT just  screams female. :) SOOO cute... 
 This CT was a gift, it doesn't have any particular meaning.
 This was a Christmas Gift from Ivan. When we were engaged, we spent a Christmas apart. I came home early and we celebrated Christmas together at my apartment. He had a card ready which led me to another card, and another card, and another card (etc), which eventually led me to this. :)
 This actually was a gift from my ex-boyfriend. It is one of the first ones I got. Basically, we were re-painting his bedroom and got in a primer/paint fight. The paint came off, but the primer did what it is designed to do....stick. I wore primer for the next couple of days.
 This was another gift. :)  I think it was a joint gift between my mom and my sister, but I am unsure. 
 My mom got me this one when I left for college. I think the phrase that goes with it is "I am only a call away" or something.
 This was one given to me for my birthday.   I am unsure of who gave it to me. It was either Ivan or my sister...(I know I should know this stuff!!!)
 My ex-boyfriend got me this CT... no clue why.
 I bought this one... just for fun. 
 This CT... well.. to be honest, I have no clue where I got it. I want to say I bought it... but it could have been a gift from Ivan. It probably was a gift from Ivan. It is so hard to remember.
 This was an ex-boyfriend CT... something like "we will always stick together"... HAHA.. glad that isn't true.. heehee.. Anyway, this is a REALLY unique CT as those are REAL magnets... and they do stick together and pull apart..
 My mom got me this one as a gift... the top part of the pot pulls off and you can see the little mouse butt.. haha.. so cute.
  Brittany (my sister) bought this one for me for Christmas because she knew I wanted it.
 Ok.. I HAD to have this CT as it just represents me. She has a paper in one hand that says "diet" and a cookie in the other. All the while, she is standing on a scale.
 This is the first CT that "I" purchased. I bought this CT not knowing that I already owned a CT (the Christmas angel). This CT is what started the collection.
 My grandma got me this CT.
Ex-boyfriend got me this one. It actually had been discontinued for a long time. He called all over the state to find one. I got it when I got my wisdom teeth pulled out. :)

New Suit...

So.... I really desperately needed to get a new suit. I had been putting it off for awhile. The suits I had before are really outdated, and they don't fit. Therefore, it was time.

Anyway, I also decided to get a nice suit. Especially since I am now working in my career field etc...it was definitely time to get a grown up professional suit. Anyway, so here are some pictures of the suit. I really like it. It i a unique color.. the jacket fits like a tailored jacket as well (which is important for me as I have a smaller waist).

Yes.. I cropped my head off in the one picture as it was an AWFUL pic. However, it was a good picture of the suit. :)
